Cherry, Almond and White Chocolate Cookies

Quick and easy bakewell-flavoured cookies to brighten your Mondays.


Makes 15.

  • 120g softened unsalted butter

  • 75g light brown sugar

  • 1 egg, beaten

  • 180g plain flour

  • Pinch of salt

  • Pinch of bicarbonate of soda

  • 60g ground almonds

  • Handful of flaked almonds, optional

  • 120g chopped white chocolate, or white chocolate chips

  • 75g chopped cherries, pitted

  • 2 drops almond extract

  1. Preheat the oven to 180 degrees.

  2. Cream the butter and sugar together in a mixing bowl.

  3. Add the almond extract and egg, and mix well.

  4. Sift in the flour and bicarbonate of soda. Stir in the ground almongs and the pinch of salt, until the mixture forms a dough.

  5. Mix in the cherries and white chocolate.

  6. Using an ice cream scoop or a tablespoon, blob the cookie dough in even balls onto two baking trays lined with baking parchment, with space between them.

  7. Scatter two or three flaked almonds on top of each ball.

  8. Bake for 15 minutes and leave to cool before scoffing.
